Cooking snapper recipes is not a difficult task- the snapper fish (like red snapper) although is made out to be difficult to cook by seafood restaurants, it is just as easy to buy at the fish market and learn how to cook yourself. Step 1
Preheat the oven to 200 degree celcius and prepare a baking tray with parchment paper.
Step 2
Heat the sesame oil in a medium pan on medium heat. Add the onions and cook, stirring constantly for 2 minutes. Add the garlic and cook for another 1 minute.
Step 3
Pour in the white wine and let simmer until the alcoholic smell has evaporated (roughly 2-3 minutes). Add in the butter, ginger, chilli and salt, and let simmer for 5 minutes. This will help the onion mixture to thicken.
Step 4
Lay the snapper on the parchment paper. Remove the onion mixture from the heat and place half within the stomach cavity of the fish. Place the remaining over the fish, spreading evenly.
Step 5
Pour over the lemon juice and cover with Snapper and tray with foil. Bake for 25 minutes. Remove the foil and bake for a remaining 20-25 minutes (or until crispy).
Step 6
Serve covered with fresh coriander, with a light green salad and glass of dry white! Enjoy!
