Want a Flavourful, Light and Flakey Pesto Crusted Salmon?

This pesto crusted salmon recipe is such a healthy option when it comes to dinner time. It only takes about 25 minutes to cook and the flavours are incredible. The toasted pine nuts and parmesan cheese adds a delicious flavour to the salmon. This recipe is an excellent choice to serve up as a main course for a family dinner or event!

INGREDIENTS

 

  • 1 Tasmanian Salmon Side
  • 8 cups basil leaves
  • 1 cup olive oil
  • 1/2 cup toasted pine nuts
  • 4 garlic cloves
  • Juice of 1 lemon
  • 1/2 cup of parmesan, grated
  • Salt and pepper to taste

METHOD

 

Step 1

Preheat oven to 200°C

Step 2

Combine basil leaves, toasted pine nuts, garlic cloves and lemon juice in a food processor. Gradually add the olive oil until it becomes a thick paste. Mix in parmesan cheese and season with salt and pepper.

Step 3

Lay the salmon skin-side down on a lined baking tray. Season with salt and pepper.

Step 4 

Spread the pesto on the salmon so it coats the entire salmon side evenly.

Step 5

Bake in the oven for 25 – 30 minutes until cooked.

Step 6

Serve with your side of fresh greens. Enjoy!
