Tajima Wagyu meat is referred to as the most famous of all the Wagyu bloodlines. The Tajima Wagyu hails from the Hyogo prefecture in Japan and is referred to as a superior meat type and famously known for being the best beef in the world. Tajima usually have slower growth rates and are generally smaller framed but this does not impact the quality and flavour of the meat. They produce excellent meat eating quality with a large eye muscle and superior marbling. 

 

Tajima Farmers: Best way for Wagyu Meat to Thrive

For the Tajima Wagyu meat program, there are a range of farmers within Australia that supply with premium quality Wagyu. Currently, there are over 60 farmers available across NSW, Victoria, South Australia that supply Tajima Wagyu. Temperate climates and areas which are cooler are chosen for the Wagyu program as this is the kind of environment Wagyu thrive in. These areas are known for having a predominance of Angus female herds which is the preferred Dam for the Tajima Wagyu program. Farmers in this region are chosen mainly because of their dedication and focus to nutrition, animal husbandry and superior maternal genetics. Wagyu calves are usually raised on grass until they are approximately 300-400 kg. The overall Tajima program has a dedicated Wagyu livestock buyer who carefully selects and purchases the Wagyu feeder cattle based on their experience. 

Tajima Processing: Innovative Technology & Processing Techniques 

 

Tajima Wagyu cattle are processed at the processing plant in Riverina which is around 100 km away from the Prime City Feedlot. The Feedlot is a state of the art facility which is known for utilising innovative technology to ensure superior carcase quality and product consistency . Constant development and innovation is at the heart of the processing method to ensure that the processing capability is at the forefront of the industry. 

Tajima Feeding Processes: Understanding the Exclusive Feeding Operations 

Tajima cattle of approximately 350-400 kg are brought to the exclusive Wagyu feeding operation which is located at Prime City in Griffith. In these operation areas, the cattle are fed with three different specialised ration types for a minimum of 350 days. Most of the components fed to the cattle are grown on the farms including hay, cereals and corn silage. The cattle at the farm are closely monitored by a nutritionist in order to ensure optimum levels of vitamin and minerals are provided to the cattle. All the components that are part of the feed are mixed on site under nutritional guidance to ensure that the exact needs of the animal are met. 

 

Tajima Genetics 

In order to ensure that the highest quality possible Wagyu genetics are used, there is close link and contact with the cattle farmers. In addition, there is an exclusive collection of genetics that is selected through high performing sires- this ensures that the meat has been tested for superior high marbling performance. Regular DNA testing of carcasses is done which allows for best genetics to be selected and guarantees consistency of the product moving forward. Information that is made available for farmers is to ensure that the best decisions possible are made. Tajima is seen as the most famous out of all Wagyu Bloodlines. The Tajima Wagyu originates from the Hyogo prefecture in Japan. Tajima Beef: Best Way to Cook
