Crispy Baked Red Emperor Fillet

Ingredients:

  • 4 Red Emperor fillets (thawed, if frozen)
  • 1 cup breadcrumbs (preferably panko for extra crispiness)
  • ½ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • Lemon wedges, for serving
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 200°C. Line a baking sheet with baking paper.
  2. Prepare the Coating:
    • In a shallow dish, mix together the breadcrumbs, Parmesan cheese, oregano, garlic powder, paprika, salt, and pepper.
  3. Coat the Fillets:
    • Pat the Red Emperor fillets dry with paper towels. Brush both sides of each fillet with olive oil.
    • Dredge each fillet in the breadcrumb mixture, pressing gently to ensure the coating sticks well.
  4. Bake the Fillets:
    • Place the coated fillets on the prepared baking sheet. Lightly spray or drizzle with a bit more olive oil.
    • Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the coating is golden brown and crispy.
  5. Serve:
    • Serve the crispy fillets with lemon wedges and a sprinkle of fresh parsley.

Suggestions:

  • Pair with a side of roasted vegetables or a fresh salad.
  • For extra flavour, you can add a drizzle of garlic butter on top of the fillets before serving.
