How to Bake Sardines in Mediterranean Flavours?

Learn how to create this Mediterranean inspired baked Sardine dish, oven baked to perfection. The dish will turn anyone into a Sardine lover with it’s bold, full flavours. INGREDIENTS

 

  • 2 cups White Rice
  • 250ml Chicken Stock
  • 1kg Australian Sardines
  • 1 tbsp Garlic Paste
  • 2 tbsp Tomato Paste
  • 1 tsp Cumin
  • 1 Red Onion, diced
  • 250g Cherry Tomatoes
  • 1 Red Capsicum, diced
  • 1 Green Capsicum, diced
  • 2 Garlic Cloves, sliced
  • ½ cup Parsley, roughly chopped
  • Salt & Pepper to season
  • ½ Lemon

 

 

 

 

METHOD

 

Step 1

Combine the rice, chicken stock, garlic paste, tomato paste and cumin and cook in a rice cooker.

Step 2

Fry the red onion for 3 mins on a medium heat. Add the capsicum and fry for a further 2 mins.

Step 3

Combine with the cooked rice. Line the bottom of a baking dish. Place the sardines on top. Spread cherry tomatoes and sliced garlic on top of the sardines.

Step 4

Add a generous drizzle of olive oil, season with sea salt and pepper.

Step 5

Bake for 20 mins at 180 degrees

Step 6

Drizzle with lemon juice and dress with chopped parsley to serve
