BBQ Oysters with Chipotle Bourbon Butter

Ingredients:

  • For the Oysters:
    • 24 fresh oysters, shucked and on the half shell
    • Lemon wedges, for serving
    • Fresh parsley, chopped, for garnish
  • For the Chipotle Bourbon Butter:
    • 100g unsalted butter, softened
    • 2 tablespoons bourbon (use your favourite brand)
    • 1-2 chipotle peppers in adobo sauce, minced (adjust based on spice preference)
    • 2 cloves garlic, minced
    • 1 tablespoon fresh lime juice
    • 1 teaspoon smoked paprika
    • 1 teaspoon honey
    • Salt and pepper, to taste

Instructions:

  1. Prepare the Chipotle Bourbon Butter:
    • In a small bowl, combine the softened butter, bourbon, minced chipotle peppers, minced garlic, lime juice, smoked paprika, honey, salt, and pepper. Mix until well combined.
    • Place the mixture onto a piece of plastic wrap, form it into a log shape, and refrigerate for about 30 minutes to firm up.
  2. Grill the Oysters:
    • Preheat your BBQ grill to medium-high heat.
    • Once the grill is hot, place the oysters on the half shell directly onto the grill, being careful to keep them level to avoid spilling the juices.
    • Add a slice of the prepared chipotle bourbon butter on top of each oyster.
  3. Cook the Oysters:
    • Close the grill lid and cook for about 5-7 minutes, or until the oysters begin to curl around the edges and the butter is melted and bubbling.
    • Carefully remove the oysters from the grill using tongs.
  4. Serve:
    • Transfer the oysters to a serving platter.
    • Garnish with fresh parsley and serve with lemon wedges on the side.
