How to Cook Authentic Singaporean Chilli Crab?

This Chilli Crab recipe packs the perfect amount of punch. Filled with all the key ingredients to bring out the sweet, delicate flavours of the Blue Swimmer Crab. INGREDIENTS 

 

  • 1 large Uncooked Blue Swimmer Crab
  • 2 tbsp Peanut Oil
  • 1/2 Red Onion, thinly sliced
  • 2 long Red Chillies, thinly sliced
  • 2 Garlic Cloves, finely chopped
  • 2cm piece Ginger, grated
  • 2 Spring Onions
  • 3 Tomatoes, chopped
  • 2 tbsp Chinese Rice Wine
  • 1 tbsp Brown Sugar and Kecap Manis
  • 1 cup Coriander Leaves

METHOD

 

Step 1

To prepare the crab, twist off the legs and claws. Make a few cracks in the shell of each piece using the blunt side of a knife.

Step 2

Heat the oil in a wok over high heat until it starts to smoke. Add onions, chilli, garlic, ginger and spring onions.

Step 3

Stir-fry for 1 minute or until fragrant. Add the crab and toss to combine.

Step 4

Add tomato, rice wine, brown sugar and kecap manis, then toss to combine. Cover and steam for 4 minutes or until crab is cooked.

Step 5

Serve in the pot topping it off with coriander or serve on top of rice.
