How to Make Fresh Mussels in a Flavourful and Spicy Tomato Sauce?

There is nothing better than sharing a family recipe that everyone should try. This recipe from start to finish takes only 15 minutes – hard to believe but true. INGREDIENTS

 

  • ½ tsp dried Chilli Flakes
  • 1tsp Olive Oil
  • ½ Onion finely chopped
  • ½ tin chopped Tomatoes
  • 1 Garlic Clove finely chopped
  • Pepper
  • 1 tsp Parsley chopped
  • 500g Black Mussels, cleaned and beards removed
  • 3 tbsp dry white wine
  • Crusty bread to serve – optional

 

 

 

METHOD

 

Step 1

Heat the oil in a frying pan, adding onion and garlic. Fry until translucent.

Step 2

Add chilli, tomatoes and pepper and stir.

Step 3

Turn the heat up to high and add the mussels and wine. Cover with a lid. 
Stir the mussels after 2-3 mins with the sauce and put the lid back on.

Step 4


Once the mussels are all fully open, stir in the chopped parsley.


Serve in a big bowl with some crusty bread.
