Step 1
Heat olive oil in a large pan on medium-high heat until hot. Add the scallops to the pan in a single layer.
Step 2
Season with salt and pepper and fry for 2-3 minutes on one side until golden brown, then flip and fry other side for 2 minutes until lightly browned and cooked through. Remove from skillet.
Step 3
Add 2 tablespoons of butter to the pan, scraping up any browned bits left over from the scallops. Add in the garlic and cook for 1-2 minutes.
Step 4
Pour in wine (or broth) and bring to a simmer. Reduce liquid by about half (about 2 minutes) Add the remaining tablespoon of butter and lemon juice and stir.
Step 5
Remove pan from heat and add the scallops back into the pan to warm through slightly. Garnish with parsley.
Step 6
Serve over pasta, rice or your preferred vegetables.
