Garlic Prawn and Brown Rice Stir-Fry

Ingredients:

  • 500g King prawns, peeled and deveined
  • 1 cup brown rice
  • 1 bunch spring onions, chopped (green and white parts separated)
  • 3 cloves garlic, minced
  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Fresh coriander or parsley (optional, for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Cook the Brown Rice:
    • Rinse the brown rice under cold water.
    • Cook the rice according to package instructions or using the absorption method: Add the rice to 2 cups of boiling water, reduce heat, cover, and simmer for about 30-35 minutes until tender. Fluff with a fork and set aside.
  2. Prepare the Vegetables:
    • Heat 1 tablespoon of olive oil in a large pan or wok over medium heat.
    • Add the sliced red onion and red pepper. Stir-fry for 3-4 minutes until they begin to soften.
    • Add the white parts of the spring onions and continue to stir-fry for another 2 minutes.
    • Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  3. Cook the Prawns:
    • Push the vegetables to one side of the pan. Add the remaining 1 tablespoon of olive oil to the empty side.
    • Add the King prawns and season with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and are cooked through.
  4. Combine and Serve:
    • Add the cooked brown rice to the pan with the prawns and vegetables.
    • Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together until well combined and heated through.
    • Taste and adjust seasoning with more salt, pepper, or soy sauce if needed.
  5. Garnish and Serve:
    • Sprinkle the green parts of the spring onions over the top.
    • Garnish with fresh coriander or parsley if desired.
    • Serve with lemon wedges on the side for a fresh squeeze of juice before eating.
