Greek Style Prawns in Crusty Bread Bowl

Ingredients

  • 2 tbsp olive oil
  • 1 large brown onion, finely chopped
  • 4 garlic cloves, minced
  • 500g green prawns, peeled
  • 250g cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp tomato paste
  • 400g can chopped tomatoes
  • 125 ml dry white wine
  • Green olives
  • 200g feta, crumbled
  • Chilli flakes
  • Black pepper
  • Lemon wedge
  • Sourdough bread

Method

Step 1

Preheat oven to 180°C. Heat a non-stick pan over medium heat. Add olive oil. Cook onion until soft (about 3 mins). Add the garlic and cook for one minute. Add the tomato paste and cook, stirring, for 1 minute.

Step 2

Add the wine and simmer for 2 minutes or until reduced by half. Add the canned tomato, parsley, black pepper and chilli flakes and simmer until the mixture is thick, about ten minutes.

Step 3

Transfer the tomato mixture to an ovenproof dish. Top with the prawns, cherry tomatoes, olives, and feta. Bake for 10 minutes or until cooked through.

Step 4

Cut off top of sourdough bread and remove part of centre of make a bowl. Bake for 5 minutes or until crisp. Add prawns and sauce into bowl. Garnish with parsley and lemon wedge.
