Grilled Bacon Bourbon Oysters

Ingredients:

  • 12 fresh rock oysters, shucked
  • 4 slices of bacon, finely chopped
  • 2 tablespoons bourbon
  • 2 tablespoons unsalted butter
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh parsley, finely chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 190°C/375°F).
  2. Prepare the Bacon Bourbon Sauce:
    • In a medium skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on a paper towel, leaving about 1 tablespoon of bacon fat in the skillet.
    • Add the minced garlic to the skillet and sauté until fragrant, about 30 seconds.
    • Stir in the bourbon, Worcestershire sauce, lemon juice, brown sugar, and unsalted butter. Let the mixture simmer for 2-3 minutes until slightly thickened.
    • Add the crispy bacon back to the skillet, stirring to combine.
  3. Grill the Oysters:
    • Place the shucked oysters on the grill, still in their shells.
    • Spoon about a teaspoon of the bacon bourbon sauce over each oyster.
    • Grill the oysters for 5-7 minutes, until the edges curl slightly and the sauce bubbles.
  4. Serve:
    • Carefully remove the oysters from the grill and place them on a serving platter.
    • Garnish with fresh parsley and serve with lemon wedges on the side.
