Grilled Pippies with Jalapeño Parsley Butter Recipe

Pippies are small, saltwater clams native to Australia. In recent years, grilled Pippies have become an Australian summer favourite – a perfect choice  for entertaining family and friends.

INGREDIENTS

  • 1kg pippies
  • 1/2 cup fresh parsley
  • 2 jalapeños
  • Lemon zest
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/2 cup butter, unsalted

METHOD

Step 1

To make the jalapeño parsley butter, preheat the grill to high heat. Add jalapeños and char all over, about 2 minutes per side.

Step 2

Once charred, remove from heat and place in a bowl to cook, cover with a towel. Once cool enough to handle, slice the jalapeños in half, remove your desired amount of seeds and finely dice.

Step 3

In a bowl, mix together softened butter, jalapeños, honey, parsley, zest of 1 lemon and a pinch of salt. Refrigerate for up to 2 weeks. Soften before serving.

Step 4

To make the pippies, preheat the grill to high heat. Once hot, add the pippies in a single layer, cover and cook until the grilled pippies open, about 5-10 minutes. Discard any pippies that do not open.

Step 5

Toss the hot pippies with the jalapeño butter and serve with more butter, toasted bread and corn. Enjoy warm.
