This grilled scampi recipe is super delicious and easy to make. The best way to eat these scampi in the shell is to peel them at the table and lick the garlicky flavours off your fingers. It makes a perfect appetiser or main course to serve guests — they’ll think it took you a lot longer to make!

Step 1
Preheat oven grill to 250˚C or a barbecue to high.
Step 2
Slice each scampi in half, removing the vein.
Step 3
Place scampi on a grill proof tray. Mix salt, rosemary, parsley, lemon zest, garlic and chilli flakes together. Sprinkle the season mixture over the scampi and drizzle with olive oil.
Step 4
Cook scampi over the grill for about 3 minutes – checking in to ensure the meat is cooked through.
Step 5
Serve with a squeeze of lemon juice.
