Enjoy Oysters at Home with a Simple Twist on an Old Classic

A retro classic for those who want to showcase their Oysters a bit differently. Enjoy the smokiness of the bacon while getting a kick from the tabasco sauce- this will get your tastebuds moving. All up this is a simple, quick recipe only taking 10-12 minutes from start to finish. A perfect starter that looks and tastes great!

Oysters can be done a huge number of ways- eaten fresh on it’s own with a splash of lemon or vinaigrette dressing, deep fried oysters, baked oysters with pesto or cheese sauce and numerous other ways

INGREDIENTS

 

  • 12 Doz Sydney Rock Oysters
  • 1 tsp Sunflower Oil
  • 4 rashers thick cut Rindless Streaky Bacon
  • Small stick of Butter
  • 1 Shallot, finely chopped
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Tomato Ketchup
  • 3-4 drops Tabasco Sauce
  • ½ Lemon, cut into wedges

METHOD

 

Step 1

Preheat the grill to high.

To make the sauce, heat the oil in a medium non-stick frying pan and cook the bacon rashers for two minutes on each side until lightly browned

Step 2

Remove from the pan and set aside to drain on kitchen paper.

Melt the butter in the same frying pan and fry the shallot for two minutes or until soft, stirring regularly.

Step 3

Take the pan off the heat and stir in the Worcestershire sauce, ketchup and Tabasco sauce until well combined.

Step 4

Shuck the oysters and return, with any juices, to the deeper shell. Place into a small baking tray. Spoon over some of the sauce, break the bacon into small pieces and scatter on top.

Step 5

Grill the oysters for 1½-2 minutes, or until just cooked and the bacon sizzling. Serve with lemon wedges.
