Quick Prawn and Mushroom Ramen

Step 1: Making the Prawn Mixture

  • Place the broth, miso, ginger, coriander and 250ml of water in a saucepan over medium heat.
  • Bring to a Simmer
  • Add the mushroom, prawns, bok choy and spring onions.
  • Return to a simmer.
  • Cook for 1-2 minutes or until the prawns change colour.

Step 2: Cooking the Noodles

  • Meanwhile, cook the noodle following the packet instructions.
  • Drain well.

Step 3: Serve

  • Divide the noodles and prawn mixture among bowls.
  • Sprinkle with coriander leaves.
  • Serve with toasted sesame seeds and thinly sliced spring onion.
