Seafood Sauce 3 Ways

INGREDIENTS

 

Classic Seafood Sauce

  • 2 cups of mayonnaise
  • 2 tbsp tomato paste
  • 1 tbsp butter, melted
  • 1 tbsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp smoked paprika
  • 1/4 cup of water
  • 3 tbsp sugar

METHOD

Step 1

Combine mayonnaise, tomato paste, butter, garlic powder, onion powder, smoked paprika, water and sugar in a food processor and blend until smooth.

Step 2

Serve the sauce with prawns, bugs, lobsters, crab and oysters.

INGREDIENTS

 

Pickle & Dill Sauce

  • 2 cup of mayonnaise
  • 3 tbsp of dill pickles, finely diced
  • 1 tbsp fresh dill
  • 1 tsp whole grain mustard
  • Juice of lemon
  • 1 tsp garlic, minced
  • 1 tsp onion powder
  • Salt & pepper

METHOD

 

Step 1

Combine mayonnaise, pickles, dill, lemon juice, mustard, garlic, onion powder, salt & pepper in a bowl. Whisk together until well combined.

Step 2.

Serve the sauce with prawns, bugs, lobsters, crab and oysters.

INGREDIENTS

 

Sweet Chilli Thai Sauce

  • 1 red chilli
  • Shallot
  • 1 clove of garlic
  • tbsp palm sugar or brown sugar
  • 120ml fish sauce
  • 100ml lime juice
  • Pinch of salt
  • Fresh coriander

METHOD

 

Step 1

Add chilli, shallot, garlic, sugar, fish sauce, lime juice, salt and fresh coriander in a food processor.

Step 2

Serve the sauce with prawns, bugs, lobsters, crab and oysters.
