Sesame Coated Tuna and How to Get a Perfectly cooked Piece of Tuna Steak?

You don’t have to go to a fancy restaurant to enjoy fancy food. Just some good produce and a little love and you can feel like you are at a michelin star restaurant. INGREDIENTS

  • 3 large fresh tuna steaks
  • 200g white sesame seeds
  • 120g soba noodles  
  • 1 lime

Tuna and Soba Noodle Dressing

  • 2 tbsp rice wine vinegar
  • 4 shallot, finely diced
  • 1 small red chilli, finely diced
  • 3 tbsp low sodium soy sauce (or tamari sauce for gluten free option)
  • 1 tsp honey
  • 2 tbsp sesame oil
  • 1 garlic clove, crushed
  • 1 tsp ginger, finely grated  

Asian Slaw

  • 2 medium cucumbers, peeled
  • ½ avocado, sliced thinly
  • 2 carrot, grated
  • 1/2 white Chinese cabbage, finely chopped
  • ¼ purple cabbage, finely chopped
  • ¼ cup bean sprouts
  • ¼ cup pea shoots
  • ½ bunch shallots, finely diced
  • 1 tbsp peanuts or almonds, chopped
  • White and black sesame seeds to season
  • Dressing: 1 lime juiced, 1 tbsp olive oil and 2 tbsp white wine vinegar

METHOD

Step 1

Rub the steaks with sesame seeds until completely covered, then wrap individually in glad wrap and place in the fridge for 20 to 30 minutes.

Step 2

To cook the soba noodles, follow the instructions on the packet. Once ready run under cold water and set aside until ready to be dressed and served with salad and tuna.

Step 3

Chop the ingredients for the Asian slaw and dress.  Set aside until the fish and soba noodles are ready to serve.

Step 4

Place a medium or large non-stick pan on medium-low heat. Cook each tuna steak for 1-2 minutes each side for medium rare or a little longer until cooked to your liking.

Step 5

Place all the dressing ingredients into a small saucepan over medium-low heat until smoking. Continue to stir slowly while on the stove.  

Step 6

Pour half the dressing onto the soba noodles and mix.  Pour the remaining half of the dressing onto the cooked tuna.

Step 7

Evenly divide salad and noodles on a plate. Slice the tuna and place on top of the noodles. Add a squeeze of lime and enjoy!
