  • 2 Barramundi Fillets
  • 4 Tbsp’s Butter
  • 2 Cloves Garlic, minced
  • 1 Lemon (juice)
  • Salt & Pepper to taste

  1. Prepare the Fillets: Pat the fresh barramundi fillets dry with a paper towel—season both sides with salt and freshly ground black pepper.
  2. Sear the Fish: In a large skillet, heat olive oil over medium-high heat. Place the fillets skin-side down and cook for 3-4 minutes until the skin is crispy. Flip and cook the other side for an additional 2-3 minutes. Once done, transfer the fillets to a plate and cover to keep warm.
  3. Make the Lemon Butter Sauce: In the same skillet, reduce the heat to medium. Add unsalted butter and allow it to melt. Stir in minced garlic and sauté until fragrant, about 1 minute. Pour in the fresh lemon juice, stirring continuously for another minute. Season with additional salt and pepper if needed.
  4. Combine and Serve: Return the barramundi fillets to the skillet, spooning the lemon butter sauce over them. Let them simmer for a minute to absorb the flavours. Garnish with chopped fresh parsley or dill before serving.
