How to Make a Thai-Style Succulent Baked Bass Groper?

INGREDIENTS

 

  • 4 Garlic Clove crushed
  • 2 Bass Groper Fillets
  • 1/4 cup Lemongrass stalk chopped
  • 1 cup Coriander chopped
  • 2 Carrots chopped into 2
  • 1 Courgette sliced
  • 2 Red Chilis finely chopped
  • 2 tbsp Sweet Chilli Sauce
  • 1 tbsp fresh Ginger grated
  • 1 tbsp Red Thai curry Paste
  • 2 tbsp fresh Lime Juice

METHOD

 

Step 1

Place fish in a shallow non-metallic ovenproof dish.

Step 2

Combine garlic, lemongrass, chilis, ginger and curry paste in medium bowl. Pour over fish, refrigerate for up to 3 hours.

Step 3

Once fish is marinated – Bake the courgette & carrot at 180c for 10mins or until soft.

Step 4

Combine ingredients with chilli sauce

Step 5

Preheat oven to 180C.

Step 6

Cover dish with a lid or foil, bake for about 30 minutes or until fish is cooked through.

Serve topped with coriander
