Recreating the magic of fast-food favourites at home is satisfying, not just because it allows you to control the ingredients, but also because it offers a personal touch, blending tradition with innovation, resulting in a delightful culinary masterpiece every time.

What’s the best fish to use for some crispy fish burgers?

When it comes to choosing the perfect fish fillets for your fish burger, opt for white fish varieties like barramundi, snapper, haddock and coral trout. These fish have a mild flavour that pairs wonderfully with a crispy coating, making each bite a delectable experience.

Ingredients:

4 white fish fillets

1 cup panko breadcrumbs

1/2 cup plain flour

2 eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to your preferred level of spiciness)

Vegetable oil for frying

4 brioche buns

Salt and pepper to taste

Tartare sauce:

1 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 tablespoons finely chopped pickles

1 tablespoon lemon juice

Salt and black pepper to taste

Is tartare sauce different from tartar sauce?

Tartare sauce and tartar sauce actually refer to the same mayonnaise-based condiment typically served with seafood dishes. However, the former is the spelling used in Australia, South Africa and some parts of Europe while the latter is more common in the United States.

Instructions:

1. Prepare everything.

Before you dive into the cooking process, it’s crucial to prepare your ingredients and workspace.

  • Lay out all the ingredients on your kitchen counter.
  • Line a baking tray with paper towels to drain excess oil from the fried fish.

2. Create the crispy coating.

  • In a shallow bowl, whisk the eggs.
  • On one plate, spread out the flour seasoned with salt and pepper, and on another plate combine the panko bread crumbs, garlic powder, onion powder, cayenne pepper, salt and black pepper. Mix well.
  • Dredge the fish fillet in the flour, shaking off any excess.
  • Next, immerse it in the whisked egg, allowing any surplus to drip off.
  • Press the breadcrumbs gently onto the fish to create a perfectly crispy exterior.

3. Fry the fish fillets.

  • Get a large frying pan and heat vegetable oil over medium-high heat.
  • Fry the coated fish fillets in batches for about 3–4 minutes on each side or until they turn golden brown and crispy.
  • Place the fried fillets on the paper towel-line baking tray.

4. Make the tangy tartare sauce.

  • In a small bowl, mix together mayonnaise, apple cider vinegar, Dijon mustard, finely chopped pickles, lemon juice, salt and black pepper to create a tangy and creamy tartare sauce.

5. Assemble the perfect fish burger.

  • Toast the brioche buns to add a delicious crunch to your burger.
  • On the bottom half of each bun, spread a generous dollop of your tartare sauce.
  • Place a crispy fish fillet on top of the sauce.
  • Add shredded iceberg lettuce, sliced tomatoes and thinly sliced red onion to enhance the burger’s freshness and texture.
  • Finally, place the top half of the brioche bun to complete your mouthwatering fish burger.

6. Enjoy your culinary masterpiece.

Your homemade crispy fried fish burgers are now ready to be savoured. Serve them with a side of golden fries or refreshingly crisp slaw for a delightful meal that will impress your family and friends. You can bet that the combination of the crispy fish fillet and the tangy tartare sauce will create a symphony of flavours that will leave everyone wanting more.

Tips for an Even Healthier Crispy Fish Burger

  • Choose a healthier cooking oil for frying. Try olive oil or avocado oil to reduce the saturated fat content.
  • Opt for whole-grain buns instead of brioche buns for added fibre and nutrients.
  • Air fry the fish fillets for a healthier cooking alternative. Coat the fillets with a light drizzle of olive oil and air fry at 200°C (390°F) for approximately 12–15 minutes, flipping halfway through.
