Enjoy Homemade Chicken Soup

Everyone has their own version of chicken soup and this nourishing version from the Philippines, is perfect for a warming your soul on those cold nights. This homemade chicken soup is satisfying, full of flavour and taste incredible. A perfect dish to pair up with a bowl of rice.

INGREDIENTS

  • 50ml vegetable oil
  • 10cm piece of ginger (sliced thinly)
  • 4 garlic cloves (sliced thinly)
  • 2 eshallots (sliced thinly)
  • 1 whole chicken (broken down into 8 pieces)
  • 50ml fish sauce
  • 2lt water
  • 2 choko or green papaya (peeled, deseeded and sliced)
  • 1 large bunch of your favourite greens, washed and chopped (bok choy, kang kong, choy
    sum, etc)

METHOD


Step 1

Heat the oil in a large, deep saucepan over medium heat. Add the onion, ginger and garlic, and cook for 4 minutes, stirring, until soft. Increase the heat and add the chicken, then cook for roughly 2 minutes on both sides or until lightly browned.

Step 2

Add the fish sauce and water, bring to the boil, skim off any scum from the surface, then reduce the heat to low and cook for 35 minutes, or until chicken is almost tender.

Step 3

Add in the choko and cook for another 5 minutes or until tender, then finally add the greens and cook until soft.

Step 4

Taste and adjust seasoning if desired.
