Ingredients

  • 2 steamed lobsters, each weighing 1kg
  • 4 tablespoons butter, unsalted
  • 1/2 cup celery, finely chopped
  • 1/2 cup dry sherry
  • 3 garlic cloves, crushed
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • Kosher salt, to taste
  • 1 cup onion, finely chopped
  • 1/2 cup carrot, finely chopped
  • 1/2 cup button mushrooms, finely chopped
  • 2 tablespoons tomato paste
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup white wine, dry
  • 3/4 cup milk, whole
  • 3/4 cup heavy whipping cream
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Detach the tails and claws from the lobsters, extract the meat, discard the green tomalley, and reserve the shells. Chop the meat to yield 2 1/2 cups, place in a bowl, cover, and refrigerate.
  2. In a Dutch oven, melt 2 tablespoons of unsalted butter over medium heat. Add the lobster shells and cook for 8 minutes. Pour in 1/2 cup of dry sherry and cook for 2 minutes. Add celery, garlic, bay leaves, peppercorns, water, and kosher salt. Bring to a boil, reduce heat, and simmer for 15 minutes. Strain and set aside.
  3. Melt the remaining butter in a skillet over medium heat. Add onion, carrot, mushrooms, tomato paste, cayenne pepper, and kosher salt. Cook for 5 minutes. Add white wine, bring to a boil, reduce heat, and add the lobster stock. Simmer for 10 minutes.
  4. Blend the mixture using an immersion blender until smooth. Return to medium heat, stir in milk and cream, and bring to a simmer. Add the lobster meat, reserving 1/4 cup for garnish.
  5. To serve, ladle the bisque into bowls, top with reserved lobster meat and chopped fresh chives.

Ingredients

  • 4 tablespoons of butter, unsalted
  • 1 tablespoon of bacon, minced (approximately 1/2 ounce)
  • 1 chopped Spanish onion
  • 1 chopped carrot
  • 1 chopped celery stalk
  • 4 cloves of minced garlic
  • 5 tablespoons of all-purpose flour
  • 5 cups of low-sodium chicken broth (homemade or canned)
  • 28 ounces of canned, peeled whole tomatoes (with liquid), coarsely chopped
  • 3 sprigs of parsley
  • 3 sprigs of fresh thyme
  • 1 bay leaf
  • 1 cup of heavy cream
  • 1 3/4 teaspoons of kosher salt
  • Freshly ground black pepper to taste

Instructions

  1. Melt butter in a large soup pot over medium-high heat. Add bacon and cook until crisp, then transfer to a paper towel-lined plate.
  2. Reduce heat to medium, add onion, carrots, celery, and garlic to the pot, and cook covered for about 8 minutes.
  3. Mix in flour and cook for 3 minutes. Add broth and tomatoes, and bring to a boil while whisking continuously.
  4. Tie parsley sprigs, thyme, and bay leaf together and add to the pot. Simmer for 30 minutes, then let the soup base cool.
  5. Remove the herb bundle, and blend the mixture in batches until smooth. Strain the tomato puree using a sieve and return it to the pot.
  6. Reheat the puree over medium heat. Whisk in heavy cream and salt, and season with pepper to taste.
  7. Serve the soup in warm bowls, garnished with crispy bacon.

  1. 3 tablespoons of butter, unsalted
  2. 1 small chopped white onion
  3. 1 minced garlic clove
  4. 1 tablespoon of light brown sugar, firmly packed
  5. 1/2 teaspoon of freshly ground cinnamon
  6. 1/4 teaspoon of white pepper
  7. 1/4 teaspoon of freshly ground nutmeg
  8. 1/8 teaspoon of cayenne pepper
  9. 15 ounces of pure pumpkin puree (canned)
  10. 3 cups of low-sodium vegetable broth
  11. Kosher salt to taste
  12. 1/2 cup of heavy whipping cream

Instructions

  • Melt butter in a large pot over medium heat.
  • Add the chopped onion and sauté for 5 minutes.
  • Mix in garlic, sugar, cinnamon, pepper, nutmeg and cayenne, cooking for 3 minutes.
  • Stir in pumpkin puree and vegetable broth, season with salt and bring to a boil.
  • Reduce heat to low, simmer for 20 minutes and then stir in heavy cream.
  • Let the soup cool for 10 minutes.
  • Blend the soup until smooth, adjusting consistency with extra water or broth if needed.
  • Reheat the soup in the pot or a large saucepan and serve warm.
